Sea Glass Jello
Eat your vegetables.
They are good for you.
Jello and condensed milk?
Most likely not a best nutritional choice but it will make you feel like a kid again AND it has restorative powers.

Why just this past weekend this sea glass jello was the remedy for a skinned knee.
It helped stop a bout of crying over a lost toy and alleluia if it didn't chase away a serious case of Monday blahs.
Bet your life salad can't do that!
Sea Glass Jello
*I have encountered this recipe on so many sites where it goes by the name broken glass, or stained glass or glass block jello. However I have decided to follow The Recipe Girl who calls it sea glass jello because it reminds her of summer and beaches and collecting sea glass on the beach.
4 boxes (3 oz. each) of Jell-O or any other brand of coloured gelatin. Use what ever colours you want. I like that you can customize the colours for the holidays. ...red and green for Christmas, red and white for Valentine's Day. These were made over the Carnival long weekend thus the multi-coloured theme....you get the idea
1 (14 oz.) can sweetened condensed milk
2 envelopes unflavoured gelatin
METHOD
For each flavour, dissolve one box of jello in one cup of boiling water. Pour into a container and chill 4 hours until firm or overnight. You can spray the containers with cooking oil if you are worried about them sticking but I don't and I've never had a problem getting them out of the containers.
After chilling the four flavours, run a knife through them and cut them into small blocks.
Carefully mix the blocks in a 9 x 13 pan
In another bowl, sprinkle 2 envelopes unflavoured gelatin into 1/2 cup cold water. After the gelatin blooms, add 1 1/2 cup boiling water and dissolve. Add the can of condensed milk. Stir and cool.
Pour cooled milk mixture over jello and chill overnight
Slice into blocks and serve.

Saga Boy Mojitos

If you have the good fortune to live in a country that places high value on the festival known as Carnival then you no doubt already know that this is the last hurrah before the austere and solemn occasion of Lenten prayer and fasting.
The debauchery though questionable is entirely legal.
Carnival is not complete without an inebriating drink of some sort and this one makes use of one of my favourite Angostura cocktails. You'll need a local variety of tangerines called portugals but feel free to substitute with tangerine or mandarin juice sweetened to your taste.
Saga Boy Mojito
*Saga Boy is a Trinidadian term for a guy who is a playboy. He is very interested in his looks and dressing well and likes the ladies.
INGREDIENTS:
2 oz White Oak Rum
.5 oz Lime Juice
2 oz Portugal Juice
Mint Leaves (8-10)
Soda Water (splash)
2 dashes Angostura® orange bitters
METHOD: In a tall glass add white rum and lime juice then 8-10 fresh mint leaves. Using muddling stick gently bruise leaves then fill glass with cracked ice. Pour in the portugal juice, soda and Angostura orange bitters. Garnish with sprig of mint.
